Made from a blend of different parcels totalling eight hectares, this is the epitome of the fresh, clean-as-a-whistle Chablis made by Didier and Pascal Picq from their vines in the village of Chichée. No oak is used across their range; the policy here is to use only stainless-steel tanks for fermentation and ageing, allowing the fresh citrus and orchard fruits to express themselves with the steely, chalky mineral character of Chablis. The 2019 is juicy, concentrated and refreshing, with a touch of extra ripeness thanks to the warm summer.
