香檳及起泡葡萄酒
In 1668, Dom Pérignon is said to have discovered how to make sparkling wine; today his technique is used the world over, although Champagne continues to make some of the finest. France’s most northerly wine region, Champagne is now home to 15,000 growers and 290 ‘houses’. A blend of grape varieties is usually required: white Chardonnay to add fruit and elegance, and two reds – Pinot Noir and Pinot Meunier – to provide body and backbone.

Sourced from the prestigious Grand Cru village of Mailly, located at the heart of the Montagne de Reims, and benefiting from over three years ageing, our UKC Cuvée is a classic blend of 75% Pinot Noir and 25% Chardonnay.

2006 Krug, Clos Du Mesnil (Gift Box)
Slated for release later this year, Krug's 2006 Blanc de Blancs Clos du Mesnil unwinds in the glass with aromas of buttered citrus fruit, crisp green pear, warm pastry, freshly baked bread, apricot and licorice. Full-bodied, layered and concentrated, the 2006's comparatively extroverted and gourmand bouquet is in contrast to its deep, chiseled and tightly wound palate, and it's here that the site really dominates the vintage signature. Long, sapid and penetrating, complemented by a pillowy pinpoint mousse, this is a brilliant Blanc de Blancs that has been well worth the wait. By the standards of young Clos du Mesnil, it's already quite approachable and can already be drunk with considerable satisfaction. - Wine Advocate

Disgorged in October 2022, the 2013 Dom Pérignon is a charming and elegant vintage for this cuvée. It reveals complex aromas of buttery pastry, spices, citrus oil, almonds, honey and, with aeration, a touch of smoke. The palate is medium to full-bodied, perfectly balanced, with a chiseled and tightly wound profile. The long, cool growing season has brought freshness and a delicate earthy note to the finish. 2008 Dom Perignon Rosé Lady Gaga Limited Edition (with Gift Box)The creative collaboration between Dom Pérignon and Lady Gaga continues this year. Finding harmony in a tense tension, they gave new life to their shared desire to create works with extremes and duality. To create yourself and your own story. And keep spinning the story over and over again. This is what Dom Pérignon embodies in every vintage, and what Lady Gaga does with boundless energy.
The 2008 Dom Pérignon Rosé is magnificent. Rich and deep in the glass, the 2008 offers up an exotic mélange of aromas and flavors. Sweet red cherry, mint, orange peel and rose petal all grace this beguiling beauty. Bright acids and a little less still red Pinot (21%) than in most recent editions yields a Rosé that is delicate and light on its feet, with less of the vinous intensity that marked vintages such as 2006. There is a classic feeling of austerity in the 2018 that is mesmerizing. Drink 2026-2048.

2004 Champagne Dom Pérignon, P2, Brut
The 2004 Dom Pérignon P2 is drinking beautifully on release, wafting from the glass with aromas of sweet orchard fruit, fresh peach, pastry cream, buttered toast and cotton candy that display a less reductive profile than the original disgorgement. Medium to full-bodied, pillowy and charming, with an ample, enveloping core of fruit, succulent acids and a pretty pinpoint mousse, it concludes with a long, sapid finish. Forward and giving, there's no obvious reason to defer gratification. 95/100. William Kelley, The Wine Advocate
Delivers mandarin orange, ripe cherry, raspberry and apricot fruit notes, which are an exuberant burst of flavor at the entry point of this otherwise refined and subtle Champagne. The expressive fruit is joined on the lacy mousse by toast, pastry cream, Earl Grey tea leaf and an underpinning of minerally chalk and smoke. Lithe and graceful on the palate, but with a dancer's sense of restrained power. Drink now through 2037. 97/100 Alison Napjus, Wine Spectator

2005 Champagne Taittinger, Comtes de Champagne, Blanc de Blancs, Brut
2005 Taittinger Comtes de Champagne is finely aromatic, a rich and creamy Blanc de Blancs at its very best. Although the 2005 can be enjoyed from release, a decade of patience will be well rewarded.
When Pierre Taittinger first discovered the Champagne region, he was a young officer during the First World War. He returned several years later to invest his energy into developing a family-owned independent Champagne house in Reims which is still managed by the Taittinger family today.
Francois Taittinger chose Chardonnay as the dominant grape as he believed that modern tastes would increasingly appreciate the lightness, finesse and elegance of the Chardonnay grape in their flagship offering - Comtes de Champagne - first produced in 1952.
“We will never produce a large quantity of Comtes de Champagne because the technical characteristics we require so that this cuvée can be a very great wine are essentially unique in Champagne and very financially demanding.
The Comtes de Champagne displays an eternal youth derived from our province’s greatest Chardonnay, a triumphant blend of force and elegance. Connoisseurs will appreciate it.” Pierre-Emmanuel Taittinger

An incredibly fresh, mineral and focused Champagne with aromas and flavours opening up in the glass beautifully. The 2007 Comtes de Champagne Rosé is a total knock-out. Racy and exuberant in the glass, the 2007 wraps around the palate with stunning textural depth and resonance. The 2002 Brut Grand Cru Millésime is spectacular today, soaring from the glass with a complex bouquet of smoky pear, lemon, mandarin orange and peach mingled with smoke, praline, crushed mint and hints of wet chalk. This is very structured and framed with an almost red sensibility. Very phenolic. Full-bodied in a tightly wound ball with so much going on. Very pinot like. Mineral and stone. Shell and stone. 2010 Dom Pérignon
Apricot, pastry, chamomile, mint and light tropical notes are all signatures of a hot vintage with a very fast final phase of ripening that trails only 2002 and 2003 in terms of sugars. Of course, the year had plenty of challenges. The first part of the year was marked by cold and very dry weather during the winter and spring. June saw heat and some stress in the vines. July and August were quite warm, with heavy rains on August 15 and 16 that caused a widespread outbreak of botrytis that accelerated rapidly in the days leading up to harvest. Chef de Caves Vincent Chaperon explained that Chardonnay was favored over Pinot because better aeration within the clusters helped fend off rot, while parcels that had been less stressed by the June heat also suffered less from the effects of botrytis. Perhaps because of the unevenness in the season, there is also something disjointed about the 2010. While sugars were high, so were acidities, just behind 2008 in the decade of the 2000s. It will be interesting to see where the 2010 goes over time. It is the first vintage made under the direction of Vincent Chaperon, who worked alongside outgoing Chef de Caves Richard Geoffroy for many years. Drink 2021-2035. Antonio Galloni

Champagne R&L Legras, Cuvée Hommage, Blanc de Blancs, Brut
This, quite simply, is one of the finest Non Vintage Chardonnay Champagnes that one is likely to find, rather like Krug Grande Cuvée in its multi-vintage Grand Cru assemblage and its encyclopaedic complexity. Aged on lees for over ten years, the Hommage is rich and exotic on one level, with plenty of nutty depth, but also wonderfully fresh, linear and precise. Powerful enough for langoustines and other fruits de mer, this is so good that it works well as both aperitif and digestif…a revelation!
