Description
Nama Sake (生酒Unpasteurized sake), is a perfect sake expression that captures the essence of spring in a bottle. After an immense first release of Nama-Ken last year, we are very excited to offer the second release of the Nama Ken today, together with its exciting brand new sibling – the Nama version Gin no Iroha Junmai Daiginjo.
The Nama-Ken is not only unpasteurized, but also undiluted and unfiltered, and as a result we can expect all the flavours will be even more pronounced.
The Gin no Iroha, Junmai Daiginjo, which is a new limited release sake in 2020 is made from a brand new sake rice Gin no Iroha (吟のいろは) produced in Miyagi宮城.. It was designed for making aromatic sake with a softer texture, and it is exclusively used by breweries in Miyagi. Katsuyama has made this sake in a “Yama-no-kasumi (かすみ生酒)” style, which is a lightly cloudy style bottled without the precipitation of sake lees after filtering. As a result, the sake is fresher and fruitier.
